China Oolong Tea – Simpson and Vail

Oolong teas are made from larges leaves that are produced in the late Spring. Oolong differs from green, black, and white teas by the method of processing and are the most labor intensive tea to produce. This tea has a lingering flavor with a light earthy taste.
Teas come in $3.50/1oz bags. Use about 1-2 teaspoons per 8oz of water. Makes about 15 cups. Brew tea at 195 degrees and steep for 4 minutes. Steep for 15 seconds longer on each subsequent infusion.
